  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt butter and brown sugar until combined. Stir in vanilla extract.
  3. Add rolled oats and cook on low heat for 3-4 minutes, stirring well.
  4. Press half of the oat mixture into the prepared dish to form a base layer.
  5. In a microwave-safe bowl, melt peanut butter and chocolate chips together until smooth. Reserve some for drizzling later.
  6. Pour the chocolate-peanut butter mixture over the oat base and spread evenly.
  7. Top with the remaining oat mixture and gently press down.
  8. Drizzle reserved chocolate mixture on top.
  9. Chill in the refrigerator for at least 2-3 hours before slicing.
