  • 1 large yellow onion (sliced)
  • 1 cup ginger beef broth
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk (warmed)
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Prepare the Pulled Beef: Place trimmed beef shoulder and sliced onions in a slow cooker or Instant Pot. Add ginger beef broth and cook on low for 6-8 hours (slow cooker) or high pressure for 60 minutes (Instant Pot).
  2. Cook the Pasta: Bring salted water to a boil and cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. Make the Cheese Sauce: In a medium saucepan, melt butter over medium heat. Whisk in flour to create a roux. Gradually add warmed milk until smooth, then stir in shredded cheddar cheese until melted.
  4. Combine Everything: Mix pulled beef with cooked macaroni and BBQ sauce, then pour in cheese sauce and stir well.
  5. Bake: Preheat oven to 350°F (175°C). Transfer mixture to a baking dish, drizzle additional BBQ sauce on top if desired, and bake for about 20-25 minutes until bubbly.
