  • ¾ cup (150 g) granulated sugar
  • ½ cup (100 g) light brown sugar
  • 2 large eggs, room temperature
  • 1¼ cup (325 g) canned pumpkin puree
  • 2 tsp (10 ml) vanilla extract
  • 4 oz. (113 g) cream cheese, room temperature
  • 4 tbsp (57 g) unsalted butter, room temperature
  • 1 tsp (5 ml) vanilla extract
  • 1 cup (125 g) powdered sugar
  • 13 tsp (515 ml) milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In a large bowl, whisk together flour, baking soda, spices, and salt.
  3. In another bowl, mix canola oil, sugars, eggs, pumpkin puree, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry until just combined.
  5. Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. For the frosting: Beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla. Add milk if needed for desired consistency.
  7. Once cooled completely, frost the bread generously.
