  • 110g coconut oil (or sunflower oil)
  • 170g pumpkin puree
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp vanilla extract
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 3 tsp pumpkin spice
  • 100g powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 175 degrees Celsius. Grease a small springform pan (20-22 cm) and dust it with flour.
  2. In a mixing bowl, beat together the eggs and sugar until light and fluffy. Add oil, pumpkin puree, vanilla extract, and optional maple syrup; stir until combined.
  3. In another bowl, mix flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes. Cover loosely with foil and bake for an additional 20 minutes or until a toothpick comes out clean.
  5. Cool completely before glazing with a mixture of powdered sugar, milk, and maple syrup.
