  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes and layer them upright in the greased dish.
  5. In a saucepan over medium heat, mix together cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until well combined.
  6. Squeeze roasted garlic cloves into a paste and stir into the creamy mixture.
  7. Pour the creamy mixture over the layered potatoes and cover tightly with foil.
  8. Bake covered for about 40 minutes; then uncover and sprinkle on remaining cheeses.
  9. Bake uncovered for an additional 30 minutes until bubbly and golden brown.
  10. Let cool slightly before serving; garnish with fresh chives.
