  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 2 cups chicken stock
  • 1 cup fresh basil (roughly chopped)
  • ½ tsp ground black pepper
  • 1 tbsp sugar
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F. Arrange tomato halves on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 1 hour.
  2. In a large pot over medium heat, sauté diced onion in olive oil or butter until softened (about 5 minutes).
  3. Add minced garlic, thyme, salt, and pepper; cook for another minute until fragrant.
  4. Stir in crushed San Marzano tomatoes, chopped basil, and sugar; simmer for 10 minutes.
  5. Add roasted tomatoes and chicken stock; let simmer for about 30 minutes.
  6. Use an immersion blender to purée until smooth.
  7. Stir in heavy cream until well combined.
  8. Serve warm, optionally topped with mini croutons.
