  • 1 pound turkey sausage (mild or hot)
  • 5 tablespoons unsalted butter
  • 21/4 cups mirepoix (diced carrots, celery, yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese
  • 1 teaspoon minced garlic
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream
  • Optional: hearty buttered bread for serving

Instructions

  1. In a large pot over medium-high heat, cook the turkey sausage until browned. Remove from pot and set aside.
  2. In the same pot, melt 1 tablespoon of butter. Sauté mirepoix for 5–7 minutes; add minced garlic and cook for another 30 seconds.
  3. Stir in chopped potatoes, dried herbs, salt, and pepper. Pour in chicken stock and bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. In a separate pot, melt remaining butter over medium heat. Whisk in flour for one minute, then gradually add milk until thickened. Stir in heavy cream.
  5. Combine the creamy mixture with the soup base, add shredded cheese gradually until melted; return cooked sausage to pot.
  6. Serve warm with optional garnishes.
