  • 1 medium yellow onion
  • 1 cup crème fraîche (or sour cream with sugar)
  • 1 tablespoon Dijon mustard
  • 1 cup Gruyere cheese (or Swiss/fontina)
  • 1 tablespoon fresh thyme
  • 2 medium apples (preferably Granny Smith)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt butter and olive oil over medium heat. Add sliced onion and caramelize until golden brown.
  3. In a bowl, mix crème fraîche, Dijon mustard, thyme, salt, and pepper. Fold in caramelized onions and sliced apples.
  4. Roll out pie dough into a tart pan. Pour in the filling and top with grated Gruyere cheese.
  5. Bake for 40–45 minutes until golden brown and bubbly. Let cool slightly before slicing.
