  • 1 pound ground sausage (beef, chicken, or turkey)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and pepper to taste
  • 1 package of puff pastry (2 sheets, thawed)
  • 1 egg, beaten (for egg wash)
  • Optional: ½ cup grated Gruyère cheese, 1 tablespoon Dijon mustard

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt; cook slowly until golden brown (15-20 minutes). Set aside to cool.
  2. In a bowl, mix ground sausage with caramelized onions and thyme; season with salt and pepper. Optionally incorporate cheese and mustard.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out puff pastry on a floured surface and cut into rectangles (4×6 inches). Place filling on one half of each rectangle; fold and seal edges with a fork.
  5. Brush tops with beaten egg and bake for 20-25 minutes until golden brown. Cool slightly before serving.
