  • 8 ounces beef or tofu/mushrooms
  • 1 onion
  • 1 zucchini or bell peppers/carrots
  • 1 potato or sweet potato
  • 4 cloves garlic
  • 4 tablespoons Korean black bean paste (Chunjang)
  • 1 tablespoon sugar
  • 1 tablespoon mushroom soy sauce
  • 1 cup water
  • 2 tablespoons cornstarch
  • Salt and pepper to taste
  • 8 ounces fresh Jajangmyeon noodles
  • Optional: julienned cucumber for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Sauté diced onions until translucent.
  2. Add beef or tofu, cooking until browned. Stir in diced zucchini and potato, cooking until softened.
  3. Mix in Korean black bean paste, sugar, and mushroom soy sauce until well combined.
  4. Pour in water and bring to a simmer. Create a slurry with cornstarch and water; stir into the sauce until thickened.
  5. Cook Jajangmyeon noodles according to package instructions; drain.
  6. Combine cooked noodles with the black bean sauce; serve hot with optional cucumber garnish.
