  • 1/4 cup Milk of Choice
  • 1/4 cup Fine Cornmeal
  • 2 tsp Oil or Fat-Free Spray
  • 1 tsp Salt
  • 1/2 cup Fine Breadcrumbs (optional)
  • 3/4 cup Pineapple Juice
  • 2 tbsp Apple Cider Vinegar or White Vinegar
  • 2 tsp Minced Garlic
  • 1/4 tsp Powdered Ginger
  • 1 tbsp Cornstarch or Arrowroot Powder
  • Whole Pineapple (optional)
  • Sesame Seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare the cauliflower by washing and cutting it into bite-sized florets.
  2. In a large bowl, mix together 1/4 cup milk of choice, 1/4 cup cornmeal, 2 tsp oil or agave syrup, and 1 tsp salt until smooth.
  3. Toss the cauliflower florets in the coating mixture until fully coated.
  4. Spread the coated cauliflower on a lined baking sheet and bake for 25-30 minutes or until golden brown.
  5. While baking, combine 3/4 cup pineapple juice, 2 tbsp apple cider vinegar, 2 tsp minced garlic, 1/4 tsp powdered ginger, and 1 tbsp cornstarch in a saucepan over medium heat; stir until thickened.
  6. Drizzle the sauce over warm cauliflower once baked and toss gently.
