  • 3 tbsp toasted sesame oil
  • 3.5 oz shiitake mushrooms
  • 4 garlic cloves
  • 1 tbsp grated ginger
  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) coconut milk
  • 9 oz instant ramen noodles
  • Chili oil (for serving)
  • Sesame seeds (for serving)
  • Chopped chives (for serving)
  • Tofu or shrimp (optional as protein replacement)
  • Boiled eggs (optional for garnish)

Instructions

  1. Heat 1 tbsp sesame oil in a large pot over medium heat. Sauté torn shiitakes until browned, then remove and set aside.
  2. In the same pot, add another tbsp of sesame oil with grated garlic and ginger; sauté until fragrant.
  3. Pour in broth and deglaze the pot, then add turmeric, brown sugar, soy sauce, sambal oelek, red curry paste, coconut milk, and lime juice. Bring to a boil.
  4. Add ramen noodles and cook for approximately 2 minutes until tender.
  5. Serve hot topped with crispy shiitakes, sesame seeds, chopped chives, chili oil for extra heat, and half a boiled egg.
