  • 1 lb chicken breast (sliced)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 3 cloves garlic (minced)
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Juice of ½ lime

Instructions

  1. Cook the penne pasta in salted water until al dente, reserving ½ cup of pasta water before draining.
  2. Season chicken with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium heat and cook protein until done.
  3. In the same skillet, add remaining olive oil and butter. Sauté bell peppers and garlic for about 3–4 minutes until softened.
  4. Stir in Cajun seasoning, smoked paprika, and red pepper flakes; then pour in heavy cream and simmer gently while stirring in Parmesan cheese until creamy.
  5. Mix the drained pasta and cooked chicken into the sauce, adding reserved pasta water as needed for desired consistency.
  6. Garnish with fresh herbs and lime juice before serving.
