  • 1/4 cup white grape juice (cold)
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 tablespoon milk
  • whipped cream

Instructions

  1. For the pie crust, mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and white grape juice until dough forms. Chill while preparing filling.
  2. Boil sweet potatoes until tender (about 30 minutes), then cool and peel.
  3. Mash sweet potatoes until smooth. Combine with softened butter, dark brown sugar, eggs, spices, evaporated milk, and vanilla extract until well mixed.
  4. Roll out the chilled dough into a circle and fit into a pie dish. Pour in the filling and brush the crust edges with an egg-milk mixture.
  5. Bake at 350°F for about 90 minutes or until set. Cool before serving.
