  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a 9-inch springform pan or line it with parchment paper.
  3. In a bowl, mix graham cracker crumbs, sugar, and salt; stir in melted butter until combined. Press this mixture into the bottom of the prepared pan and refrigerate.
  4. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and flour until combined.
  5. Mix in vanilla bean paste and eggs one at a time. Then add sour cream and lemon juice until smooth.
  6. Brown the butter in a saucepan over medium heat until golden brown; let cool slightly before adding to the batter.
  7. Pour the filling over the crust and bake for about 55–60 minutes or until edges are set but center jiggles slightly.
  8. Turn off the oven and let cheesecake cool inside with the door ajar for an hour before cooling completely at room temperature.
  9. Chill in the fridge for at least four hours or overnight before serving.
