  • 9 oz vegan beef or portobello mushrooms
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 4 cups vegetable stock
  • 4 large potatoes, cut into chunks
  • Optional: vegan dumplings

Instructions

  1. Heat oil in a large Dutch oven over high heat. Sear vegan beef or mushrooms until golden, then set aside.
  2. Reduce heat to medium and sauté onions, carrots, and celery until softened. Add garlic and cook briefly.
  3. Sprinkle in flour; stir to coat vegetables and cook for another minute.
  4. Gradually add vegetable stock while stirring to combine.
  5. Incorporate potatoes, rutabaga, cabbage, soy sauce, salt, pepper, sugar, and herbs; stir well.
  6. Bring to a boil then reduce heat to simmer uncovered for about 45 minutes until potatoes are tender.
  7. Fold in seared protein during the last 10 minutes of cooking.
