  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or extract)
  • ½ cup + 2 tablespoons sugar
  • ¼ cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1½ cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Prepare your flax egg by combining ground flaxseed with water; let it thicken for about 5 minutes.
  2. In a bowl, cream together vegan butter, sugars, and flax egg until smooth. Stir in vanilla.
  3. In another bowl, whisk flour, baking powder, salt, cinnamon, and cornstarch. Gradually add to wet ingredients without overmixing.
  4. Prepare filling by heating water, cornstarch, pecans, brown sugar, maple syrup, and vanilla until thickened.
  5. Preheat oven to 350°F (180°C). Scoop dough onto a lined baking sheet; create an indentation and fill with pecan mixture.
  6. Bake for about 10-12 minutes until lightly golden. Cool before serving.
