  • 3 large russet potatoes or 4 large Yukon gold potatoes (peeled and diced)
  • 1 celery stalk (sliced)
  • 2 green onions (chopped)
  • 4 hard-boiled eggs (diced)
  • ¾ cup mayonnaise
  • ½ tablespoon mustard
  • 1½ tablespoons apple cider or white vinegar
  • Salt and black pepper (to taste)
  • Optional: ¼ teaspoon paprika (for garnish)

Instructions

  1. In a large stockpot filled with cold water, add the diced potatoes and bring to a boil over medium-high heat. Cook until fork-tender, about 10-15 minutes.
  2. Drain the potatoes in a colander and let them cool for about 10 minutes.
  3. In a large mixing bowl, combine sliced celery, chopped green onions, diced hard-boiled eggs, mayonnaise, mustard, and vinegar. Mix until well combined.
  4. Gently fold the cooled potatoes into the dressing mixture until evenly coated. Adjust seasoning with salt and pepper as desired.
  5. Chill in the refrigerator for at least 3-4 hours before serving to allow flavors to meld.
