  • 2 cups all-purpose flour
  • 2/3 cup cake flour
  • 1 ½ tsp cream of tartar
  • 1 ½ tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp nutmeg
  • 12 Tbsp unsalted butter, cold and cubed
  • 1 ¼ cup dark brown sugar, packed
  • ⅓ cup apple butter
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 Tbsp sugar and 1 tsp cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together all-purpose flour, cake flour, cream of tartar, cinnamon, salt, baking soda, baking powder, and nutmeg.
  3. In a separate bowl, cream together cold butter and dark brown sugar until fluffy. Mix in apple butter until well combined.
  4. Add the egg yolk and vanilla extract to the mixture and incorporate.
  5. Gradually fold in the dry ingredients until just combined; avoid overmixing.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Roll chilled dough into balls and coat in the cinnamon-sugar mixture before placing them on prepared baking sheets.
  8. Bake for about 10-11 minutes; cookies should look soft but slightly puffy.
  9. Allow cooling on baking sheets for about 10 minutes before transferring to wire racks.
