  • 1/2 cup unsalted butter, melted

  • 3/4 cup brown sugar
  • 1 1/4 cups plus 2 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp grated nutmeg (optional)
  • 3 tbsp melted unsalted butter (for coating)
  • 1/4 cup granulated sugar (for topping)
  • 1/2 tsp cinnamon (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Reduce the apple cider in a saucepan over medium-high heat until it’s halved in volume; let cool.
  3. Combine reduced cider with sour cream and vanilla in a bowl; set aside.
  4. In another bowl, beat eggs with brown sugar until smooth and frothy.
  5. Drizzle in melted butter while mixing until well incorporated.
  6. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually combine wet and dry mixtures alternately with the cider mixture until just combined.
  8. Pour batter into a prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  9. Cool slightly before brushing with melted butter and coating in cinnamon-sugar.
