  • 1 lb chopped apricots (fresh, canned, or frozen)
  • ¾ cup white granulated sugar
  • 2 tbsp cornflour/cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 6 oz cold unsalted butter
  • ½ cup sugar (for topping)
  • ¼ tsp salt (for topping)
  • 2 tbsp whole milk (or plant-based alternative)
  • ½ tsp spice powder (cinnamon, pumpkin spice, or gingerbread spices)

Instructions

  1. Preheat the oven to 375°F (190°C). Line an 8 x 8 inch square cake pan with parchment paper.
  2. In a food processor, mix flour, sugar, salt, and your chosen spice. Add cold butter and pulse until crumbly.
  3. Reserve half the mixture for topping; press the remaining dough into the pan and bake for 10 minutes until lightly golden.
  4. In a bowl, combine apricots, sugar, lemon juice, and cornstarch until evenly coated. Pour over the baked crust.
  5. Sprinkle reserved crumble mixture on top and bake for another 35-40 minutes until golden and bubbling.
  6. Allow cooling completely before slicing into squares.
