  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 2 cups dried apricots, roughly chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs. Mix in the egg and vanilla until just combined.
  4. Press about two-thirds of the dough into the bottom of the prepared pan.
  5. In a saucepan over medium heat, combine chopped apricots, water, and sugar. Cook until softened (about 15 minutes), then stir in lemon juice.
  6. Spread the apricot filling over the crust and crumble the remaining dough on top.
  7. Bake for 30-35 minutes or until golden brown. Cool completely before slicing.
