  • 1 1/2 cups brown sugar, packed

  • 2 1/2 tsp real vanilla extract
  • 3 1/2 to 4 cups unbleached all-purpose flour
  • 3/4 tsp sea salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 cups dried apricots, chopped
  • 2 cups white chocolate chips
  • 1 cup slivered almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soak chopped dried apricots in hot water for 10 minutes, then drain.
  3. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in eggs one at a time, followed by real vanilla extract, sea salt, baking soda, and baking powder.
  5. Gradually add unbleached all-purpose flour until combined.
  6. Fold in rehydrated apricots, white chocolate chips, and slivered almonds gently until evenly distributed.
  7. Scoop dough onto greased cookie sheets about 2 inches apart.
