  • 1 lb dried pinto beans
  • 4 strips turkey bacon (or omit for vegetarian)
  • 1 yellow onion, diced
  • 1 jalapeño, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ancho chile powder
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • 24 oz non-alcoholic beef broth or vegetable broth
  • 1 ½ cups chicken broth or water
  • Kosher salt to taste

Instructions

  1. Soak the dried pinto beans overnight in cold water with salt.
  2. In a large Dutch oven over medium-low heat, cook diced turkey bacon until crispy (if using). Remove bacon and set aside.
  3. In the same pot, sauté the diced onion and jalapeño until softened; add minced garlic, ancho chile powder, and cumin; cook for an additional minute.
  4. Drain soaked beans and add them to the pot along with the reserved bacon, bay leaves, broths (or water), salt, and pepper.
  5. Simmer covered on medium-low heat for about 90 minutes; then remove lid and continue simmering for another 30 minutes until thickened.
  6. Discard bay leaves before serving.
