  • 2 small mangoes (peeled and cubed)
  • 4 whole avocados (peeled and cubed)
  • 1 whole lemon (juiced)
  • 1 large clove garlic (mashed)
  • ¾ tsp salt (or less to taste)
  • 2 tbsp cilantro (finely chopped)
  • ½ small red onion (finely diced)
  • 1 cup cherry tomatoes (halved)
  • 23 tbsp olive oil

Instructions

  1. Finely dice half of a small red onion and mash one large clove of garlic.
  2. Peel and cube four ripe avocados and two small mangoes.
  3. Halve one cup of cherry tomatoes.
  4. In a large mixing bowl, combine the diced onions, mashed garlic, cubed mangoes, and avocados along with halved cherry tomatoes and chopped cilantro.
  5. Squeeze in the juice of one lemon and add salt to taste.
  6. Drizzle with olive oil and gently toss everything together until well combined.
  7. Let it chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
