  • 1 package white corn tortillas
  • 12 avocados (thinly sliced)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 tablespoons lime juice
  • 2 tablespoons pineapple juice
  • 1 teaspoon honey
  • 1 teaspoon adobo sauce
  • 2 cups canola oil

Instructions

  1. Prepare the citrus slaw by mixing cole slaw mix with chopped cilantro, lime juice, pineapple juice, and salt in a bowl.
  2. In another bowl, combine mayonnaise with honey and adobo sauce for the chipotle mayo.
  3. Slice cod into manageable pieces and pat dry.
  4. Create the batter by mixing flour, panko bread crumbs, spices, and broth until smooth.
  5. Heat oil in a skillet over medium-high heat.
  6. Dip cod pieces into batter and fry until golden brown on both sides (about 2 minutes per side).
  7. Warm tortillas in a skillet or oven.
