- 1 teaspoon extra virgin olive oil
- 6 whole scallions (thinly sliced; dark green portion kept separate)
- 16 ounces frozen corn kernels (or 3 cups fresh)
- 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend
- 4 ounces ⅓-less-fat cream cheese
- ¼ cup light sour cream
- 7 ounces Cotija cheese (grated; about 1¾ cups)
- Chopped fresh cilantro (for garnish)
- Preheat your oven to 350°F (175°C).
- In an ovenproof skillet, heat olive oil over medium heat. Sauté scallions until softened.
- Add frozen corn and Tajin; stir until combined and corn begins to soften.
- Mix in cream cheese until melted and smooth.
- Stir in sour cream and half of the Cotija cheese; combine thoroughly.
- Top with remaining Cotija cheese and bake for 10-12 minutes until bubbly.
- Broil for 2-3 minutes until golden brown.
- Garnish with cilantro and serve warm with tortilla chips or veggies.
