  • 1 teaspoon extra virgin olive oil
  • 6 whole scallions (thinly sliced; dark green portion kept separate)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend
  • 4 ounces ⅓-less-fat cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated; about 1¾ cups)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In an ovenproof skillet, heat olive oil over medium heat. Sauté scallions until softened.
  3. Add frozen corn and Tajin; stir until combined and corn begins to soften.
  4. Mix in cream cheese until melted and smooth.
  5. Stir in sour cream and half of the Cotija cheese; combine thoroughly.
  6. Top with remaining Cotija cheese and bake for 10-12 minutes until bubbly.
  7. Broil for 2-3 minutes until golden brown.
  8. Garnish with cilantro and serve warm with tortilla chips or veggies.
