  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

  2. Season chicken breasts with salt and pepper on both sides.
  3. In a bowl, whisk together balsamic vinegar, honey (or maple syrup), basil, oregano, and minced garlic.
  4. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 2-3 minutes on each side until golden brown.

  6. Bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
