  • 1/4 cup olive oil
  • 1 shallot, minced
  • 1 Tbsp honey (or agave syrup)
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 1 cup uncooked quinoa
  • 2 cups vegetable broth (or water)
  • 2 cans black beans (15 oz each), rinsed and drained
  • 1/2 cup sliced green onion
  • 1 cup chopped cilantro
  • 1 cup crumbled cotija cheese (or feta)

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 15 minutes until liquid is absorbed. Remove from heat and let sit covered for an additional five minutes.
  2. While quinoa rests, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper in a large mixing bowl until emulsified.
  3. Fluff the cooked quinoa with a fork and add it to the vinaigrette in the mixing bowl. Gently fold in the black beans, green onions, cilantro, and cotija cheese.
  4. Chill in the refrigerator for at least one hour before serving to allow flavors to meld.
