Ingredients

Scale
  • ¾ cup unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 1 ¾ cups granulated sugar, plus extra for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • 2 tablespoons lemon juice
  • 2 tablespoons lemon zest
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup fresh blueberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and prepare two baking sheets by greasing or lining them with parchment paper.
  2. In a large bowl, cream together softened butter, cream cheese, and sugar until fluffy.
  3. Beat in the egg, vanilla extract, lemon extract, lemon juice, and lemon zest until well combined.
  4. In a separate bowl, mix flour, baking soda, and salt; gradually add to the wet mixture until just combined.
  5. Gently fold in blueberries and white chocolate chips.
  6. Roll dough into balls and coat with granulated sugar before placing on prepared baking sheets about 2 inches apart.
  7. Freeze the dough balls for at least one hour before baking for optimal texture.
  8. Bake for 13-16 minutes or until edges are golden brown but centers remain soft. Allow cookies to cool on the sheet for about 10 minutes before transferring to wire racks.
