  • ¼ cup granulated sugar
  • ⅛ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon freeze-dried blueberry powder
  • 24 tablespoons blueberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine flour, baking soda, baking powder, and salt. Whisk together until well mixed.
  3. In another bowl, cream together melted butter, granulated sugar, and brown sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture; mix until combined.
  5. Gradually incorporate the dry mixture into the wet mixture until just combined.
  6. Fold in freeze-dried blueberry powder and blueberry jam gently until evenly distributed.
  7. Scoop tablespoon-sized portions onto the prepared baking sheets, spacing them about two inches apart.
  8. Bake for 11 minutes or until edges are golden but centers remain soft.
  9. Allow cookies to cool on a wire rack before decorating with melted chocolate if desired.
