  • 2 ½ cups (about 310g) all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ¾ cup (165g) light brown sugar
  • ½ cup (100g) granulated sugar
  • ½ cup (170g) honey
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (about 210g) shelled pistachios, roughly chopped (reserve ¼ cup for topping)
  • Flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan with unsalted butter. Line with parchment paper for easy removal.
  2. Melt the unsalted butter in a saucepan over medium heat until browned, then allow it to cool slightly.
  3. In a bowl, mix together the brown butter, light brown sugar, and granulated sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In another bowl, whisk together flour, baking soda, and salt; gradually fold into the wet ingredients until just combined.
  6. Gently fold in chopped pistachios.
  7. Spread the dough evenly into the prepared pan and sprinkle with flaky sea salt.
  8. Bake for 25-30 minutes or until golden brown around the edges but slightly underbaked in the center.
