  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c mayonnaise
  • 1/3 c sour cream (or Greek yogurt)
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Begin by boiling the red potatoes in a large pot of salted water until fork-tender, usually around 12–15 minutes. Drain them in a colander and allow them to cool.
  2. While the potatoes cool, prepare the dressing by whisking together mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, Dijon mustard, garlic powder, onion powder, thyme, oregano, paprika, cayenne pepper, salt, and black pepper in a separate bowl until smooth.
  3. In a large mixing bowl, combine the cooled potatoes with chopped celery, diced hard-boiled eggs, and sliced green onions.
  4. Pour the dressing over the potato mixture and gently fold everything together until well combined.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
