  • ¾ pound rigatoni pasta
  • 32 oz. marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 boneless skinless chicken breasts
  • ¾ cup flour
  • 2 teaspoons seasoned salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 1 ½ cups Italian breadcrumbs
  • ¾ cup vegetable oil
  • 2 tablespoons butter
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Cook rigatoni in salted boiling water until al dente; drain.
  2. Prepare chicken by slicing into thin fillets. Season with seasoned salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each chicken piece in flour, dip in eggs, then coat with breadcrumbs.
  4. Heat vegetable oil in a skillet over medium heat and fry each breaded piece until golden brown on both sides; drain on paper towels.
  5. In a baking dish, layer half of the marinara sauce followed by cooked rigatoni and half of the mozzarella cheese. Place fried chicken on top and drizzle remaining sauce.
  6. Top with remaining mozzarella and Parmesan cheese. Bake for 25–30 minutes until bubbly and golden.
