  • 2 large chicken breasts (halved)
  • 7 ounces cremini mushrooms (sliced)
  • 1/2 cup white grape juice
  • 3/4 cup heavy cream
  • 8 ounces uncooked spaghetti
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter (for cooking)
  • 2 tablespoons unsalted butter (for pasta)
  • 1/4 teaspoon Italian seasoning

Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and toss with butter and freshly grated parmesan cheese.
  2. In a skillet, cook the crispy alternative to bacon until crispy. Remove and set aside, leaving some fat in the skillet.
  3. Sear chicken in the skillet until golden brown on both sides; remove from pan.
  4. Sauté mushrooms in the remaining fat, adding garlic and Italian seasoning until tender.
  5. Deglaze with white grape juice, reducing it by half.
  6. Stir in heavy cream, return chicken to skillet, and simmer until cooked through.
  7. Serve over pasta with bacon sprinkled on top.
