  • 2 cups cooked chicken breast, chopped or shredded
  • 4 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Salt, pepper, and Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  2. In a large skillet over medium heat, warm olive oil. Sauté onions until translucent (5–7 minutes), then add mushrooms and garlic; cook until fragrant.
  3. Add fresh spinach and cook until wilted. Season with salt, pepper, and Italian seasoning.
  4. Layer the sautéed mixture on the bottom of the casserole dish with chopped chicken on top.
  5. Pour heavy cream evenly over the layered ingredients and sprinkle mozzarella and parmesan cheese on top.
