  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips + extra for topping
  • ½ cup semi-sweet chocolate chips + extra for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined loaf pan.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil with both sugars until smooth. Add eggs one at a time, then incorporate vanilla extract, sour cream, and mashed bananas.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Add chocolate chips and mix lightly.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle additional chocolate chips on top if desired.
  6. Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack.
