  • 1.5 pounds flank steak or skirt steak
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 cloves garlic (minced)
  • 3 cups cooked white rice
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn
  • 1 large avocado (sliced)
  • 1/2 medium red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheese
  • Sour cream or Greek yogurt (for topping)

Instructions

  1. Marinate the steak by whisking together lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, black pepper, and smoked paprika in a bowl. Pour marinade over steak in a zip-top bag; refrigerate for at least 30 minutes.
  2. Cook rice according to package instructions. Once done, stir in lime juice and chopped cilantro.
  3. Heat skillet over high heat until smoking hot; add olive oil and sear marinated steak for about 3–4 minutes on each side until desired doneness is reached.
  4. Allow steak to rest for 10 minutes before slicing against the grain into thin strips.
  5. In bowls, layer cilantro lime rice first, followed by black beans, corn, sliced steak, avocado, red onion rings, cherry tomatoes, and cheese.
  6. Top with sour cream or Greek yogurt and garnish with additional cilantro and lime wedges.
