  • 4 boneless skinless chicken breasts
  • ½ cup olive oil
  • 2 tablespoons Dijon mustard
  • Juice of 1 lime
  • Juice of 1 lemon
  • Juice of 2 oranges
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon fresh oregano, finely chopped
  • ¼ teaspoon crushed red pepper flakes

Instructions

  1. In a mixing bowl, whisk together olive oil, Dijon mustard, lime juice, lemon juice, orange juice, salt, garlic powder, Italian seasoning, thyme, oregano, and red pepper flakes until well combined.
  2. Reserve about ¼ cup of the marinade for later use. Add chicken breasts to the remaining marinade in a zip-close bag or bowl. Seal or cover and let marinate in the refrigerator for at least one hour (up to overnight).
  3. Preheat your grill over medium heat. Lightly oil the grates to prevent sticking.
  4. Remove chicken from the marinade and place on the grill. Cook for 5–7 minutes on each side or until internal temperature reaches 165°F (75°C), brushing with reserved marinade during the last few minutes.
  5. Allow chicken to rest for 5–10 minutes before slicing or serving.
