  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the olive oil, onion, and bell pepper until softened (3–4 minutes).
  3. Add chopped spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until combined. Stir in Italian seasoning along with additional salt and pepper.
  5. Gently fold in sautéed vegetables and shredded cheese.
  6. Grease a 9-inch pie dish and pour the mixture in evenly.
  7. Bake for about 40–45 minutes until golden brown. Allow to cool for 5–10 minutes before slicing.
