12 baby portobello mushroom caps
8 oz cream cheese, softened
8 oz ready-to-eat crab meat
3 handfuls of fresh spinach
2 cloves garlic, minced
1/4 cup shredded Parmesan cheese
1/2 teaspoon Old Bay seasoning
5 tablespoons unfiltered extra virgin olive oil
Instructions
Preheat oven to 350°F (175°C).
Clean mushroom caps with a damp paper towel and remove stems; set aside.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté garlic until fragrant, then add spinach until wilted.
In a large bowl, mix softened cream cheese, crab meat, sautéed spinach and garlic, Parmesan cheese, Old Bay seasoning, and remaining olive oil until well combined.
Stuff each mushroom cap with the mixture, packing gently but firmly.
Place stuffed mushrooms on a baking sheet lined with foil and sprinkle additional Parmesan on top.
Bake for 15 minutes or until golden brown and bubbling.
