  • 4 medium overripe bananas (mashed)
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar

  • ¼ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 4 oz cream cheese (softened)
  • Optional: ½ cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In one bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, mash the bananas and mix in granulated sugar, brown sugar, egg, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  5. In a separate bowl, beat softened cream cheese with sugar and egg yolk until smooth; swirl it into the muffin batter using a toothpick.
  6. Fill muffin cups about three-quarters full with batter and bake for 16–18 minutes or until a toothpick comes out clean.
