  • 3 cups shredded chicken (cooked)
  • 4 cups cauliflower rice
  • 8 oz cream cheese (or Greek yogurt)
  • 1 cup shredded cheddar cheese (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 cup chopped spinach (or broccoli florets/mushrooms)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté cauliflower rice for about 5–7 minutes until tender.
  3. In a mixing bowl, combine sautéed cauliflower rice, shredded chicken, cream cheese (or Greek yogurt), half of the cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until smooth.
  4. Fold in chopped spinach or other vegetables of choice.
  5. Spread the mixture evenly in a greased 9×13-inch baking dish and top with remaining cheddar cheese.
  6. Bake for 20–25 minutes until bubbly and golden brown.
