  • 3235 oz vegetable or chicken stock
  • 79 oz heavy cream (30% or 36% fat)

  • 1 tablespoon lemon juice
  • ½ teaspoon ground nutmeg
  • Salt & black pepper to taste

Instructions

  1. Peel and finely dice the onion and carrots; grate the carrots for even cooking. Chop young potatoes into small cubes.
  2. In a large pot over medium-low heat, melt butter and sauté onions with a pinch of salt until translucent (3-5 minutes).
  3. Add diced potatoes and grated carrots; stir for another 2-3 minutes.
