1/2 medium avocado
1/4 cup sour cream (or Greek yogurt)
1 tbsp fresh lemon or lime juice
2 tsp avocado oil (or olive oil)
8 oz lean ground turkey
3/4 cup canned black beans (drained)
4 oz green chiles
6 fajita-sized flour tortillas
1 1/2 cups shredded Monterey Jack cheese
Instructions
Preheat oven to 425°F (220°C). Spray a large rimmed baking sheet with cooking spray or brush with avocado oil.
In a mini food processor, combine avocado, sour cream, lemon juice, cilantro, salt, and water; blend until smooth. Adjust consistency as needed.
In a large non-stick pan over medium heat, sauté ground turkey and chopped onion in avocado oil until browned. Add taco seasoning, black beans, and green chiles; stir to combine.
Lay tortillas on the baking sheet and sprinkle shredded cheese on each. Spoon the turkey filling onto one half of each tortilla; fold over.
Brush tops with avocado oil or cooking spray to enhance browning. Bake for 10-12 minutes until golden brown and crispy.
