  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a round baking dish.
  2. In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half the sliced potatoes in the greased baking dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices and drizzle with the rest of the mixture.
  5. Cover with foil and bake for 45 minutes to steam the potatoes.
  6. Remove foil and sprinkle cheese on top if desired; bake uncovered for an additional 15-20 minutes until crispy and golden brown.
  7. Allow to cool slightly before slicing and serving.
