  • 2 (9") pie crusts (homemade or store-bought)
  • 7 large Granny Smith apples (peeled, cored, and sliced)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (loosely packed)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon lemon juice (plus zest from half a lemon)
  • 1 large egg (for egg wash)
  • Sanding sugar (optional)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Prepare your pie crusts: Roll out one crust and place it in a deep dish pie plate.
  3. In a mixing bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and zest. Toss until apples are evenly coated.
  4. Spoon the apple mixture into the pie crust.
  5. Roll out the second crust and place it over the filling. Seal the edges by crimping them together and cut slits in the top for ventilation.
  6. Brush the top with lightly beaten egg wash and sprinkle with sanding sugar if desired.
  7. Bake for 25 minutes at 400°F before reducing the temperature to 375°F (190°C) and baking for an additional 30-35 minutes until golden brown and bubbling.
