  • 1 ½ cups cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • ½ cup red bell pepper (diced)
  • ¼ cup red onion (finely chopped)
  • ⅓ cup crumbled feta cheese
  • 2 tablespoons fresh parsley (chopped)
  • 2 tablespoons fresh dill (optional, chopped)
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and add the orzo pasta. Cook for 8-10 minutes until al dente. Drain and let cool.
  2. While the orzo cools, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion.
  3. In a medium bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  4. In a large mixing bowl, combine cooled orzo with all prepared vegetables. Pour dressing over the mixture and gently fold until evenly coated.
