  • 4 large ripe tomatoes
  • 2 garlic cloves (pressed)
  • 1/4 small white onion (finely diced)
  • 1/2 small bunch of fresh dill weed (or other herbs)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Kosher salt and ground black pepper (to taste)

Instructions

  1. Slice the tomatoes into 1/3-inch thick rounds and arrange on a shallow platter.
  2. Sprinkle the tomato slices with kosher salt and freshly cracked black pepper.
  3. In a mixing bowl, combine pressed garlic, diced onion, chopped herbs, olive oil, balsamic vinegar, and honey. Mix well.
  4. Spoon the marinade evenly over the tomato slices.
  5. Cover with cling film and refrigerate for at least one hour (longer for more intense flavor).
