  • 8 ears of fresh sweet corn
  • 1 tablespoon neutral oil (grapeseed or vegetable)
  • 1/2 cup sour cream or Mexican crema
  • 2 tablespoons mayonnaise
  • 1/2 cup crumbled Cotija cheese or feta cheese
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon kosher salt
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. Shuck the corn, leaving husks attached at the base. Tie with kitchen twine for easy handling.
  3. Brush each ear of corn with neutral oil.
  4. Grill corn for about 12–15 minutes, turning occasionally until charred and tender.
  5. In a mixing bowl, combine sour cream, mayonnaise, Cotija cheese, chili powder, garlic powder, cumin, and salt; mix well.
  6. Remove grilled corn from the grill and generously coat each ear with the creamy sauce.
  7. Squeeze fresh lime juice over the top and garnish with cilantro before serving.
