- 8 ears of fresh sweet corn
- 1 tablespoon neutral oil (grapeseed or vegetable)
- 1/2 cup sour cream or Mexican crema
- 2 tablespoons mayonnaise
- 1/2 cup crumbled Cotija cheese or feta cheese
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon kosher salt
- Lime wedges for serving
- Fresh cilantro for garnish
- Preheat your grill to medium-high heat.
- Shuck the corn, leaving husks attached at the base. Tie with kitchen twine for easy handling.
- Brush each ear of corn with neutral oil.
- Grill corn for about 12–15 minutes, turning occasionally until charred and tender.
- In a mixing bowl, combine sour cream, mayonnaise, Cotija cheese, chili powder, garlic powder, cumin, and salt; mix well.
- Remove grilled corn from the grill and generously coat each ear with the creamy sauce.
